Step #1 Cook pork brains in boiling water till done.
Step #2 Remove membrane and tissue.
Step #3 Cut into long, thin slices.
Step #4 Heat oil in a wok.
Step #5 Stir-fry ground pork with Chili Nam Yuey & minced ginger till the ground pork turns crispy.
Step #6 Add stock, pork brains, soy sauce & wine.
Step #7 Simmer over a low flame till there's almost no liquid.
Step #8 Add cornstarch paste & remove this from heat.
Step #9 Garnish with sesame oil, ground pepper and minced spring onions.
Step #10 Enjoy! You can use beef brains instead of pork brains.
Step #11 There is no mention of whether you should use ground beef or pork if you use beef brains.
