Maa Hummus Recipe

Ingredients
  • 1 tb Cornstarch Paste
  • 4 oz Ground Pork
  • 2 tb Oil
  • 3 ea Pork Brains
  • 1 ts Shao Hsing Wine
  • 1 ts Ginger, minced
  • 1/2 ts Sesame Oil
  • 1/2 ts Soy Sauce
  • 2 c Soup Stock
  • 2 tb Chili Nam Yuey
  • 1 ts Pepper, ground
  • 1 ts Spring Onion, minced

Directions
  • Step #1 Cook pork brains in boiling water till done.
  • Step #2 Remove membrane and tissue.
  • Step #3 Cut into long, thin slices.
  • Step #4 Heat oil in a wok.
  • Step #5 Stir-fry ground pork with Chili Nam Yuey & minced ginger till the ground pork turns crispy.
  • Step #6 Add stock, pork brains, soy sauce & wine.
  • Step #7 Simmer over a low flame till there's almost no liquid.
  • Step #8 Add cornstarch paste & remove this from heat.
  • Step #9 Garnish with sesame oil, ground pepper and minced spring onions.
  • Step #10 Enjoy! You can use beef brains instead of pork brains.
  • Step #11 There is no mention of whether you should use ground beef or pork if you use beef brains.
