Macadamia Nut French Toast Recipe

Ingredients
  • 1 ts Vanilla extract
  • 1/2 ts Baking powder
  • 1 Eggs
  • 3 1/2 oz Macadamia nuts; sliced
  • 1 1/4 c Flour
  • 1/4 c Pineapple fruit spread
  • 1/2 ts Salt
  • 2 md Bananas; mashed ripe
  • 1/3 c Butter; melted
  • 1/3 c Coconut, flaked unsweetened

Directions
  • Step #1 preheat your trusty oven to 375.
  • Step #2 mix egg, butter, fruit spread, banana, and vanilla in medium bowl.
  • Step #3 Add flour, coconut, baking powder, & salt; mix well.
  • Step #4 stir in the nuts.
  • Step #5 Drop tbspsful of dough 2" apart onto lightly greased cookie sheets.
  • Step #6 Bake 10-12 mins, until lightly browned.
  • Step #7 Cool on wire racks.
  • Step #8 store this in tightly covered container.
  • Step #9 Nutrition information per cookie: 96 calories, 1/3 diabetic starch/bread exchange, 1 gm protein, 16 mg cholesterol, 1-1/4 diabetic fat exchange, 83 mg sodium, 9 gm carbohydrate, 6 gm fat, 1/4 diabetic fruit exchange.
