Ingredients
1 ts Salt
3 tb Flour; all-purpose
2 c Cheddar or Am cheese; shred'
1 c Onions; sliced
3 c Milk
Paprika
1 tb Mustard; prepared
1/8 ts Pepper; black; ground
8 oz Elbow Macaroni; uncooked
3 tb Butter or margarine
1 Pepper; green bell
Directions
Step #1 Cook elbow macaroni according to package directions for 7 mins; drain.
Step #2 Set aside.
Step #3 In a pan, melt butter or margarine add flour slowly, stirring continually.
Step #4 Slowly add milk, stirring continually.
Step #5 Stir until mixture is smooth, add 1 c cheese slowly, stirring continually.
Step #6 Continue to stir & cook mixture until it just thickens.
Step #7 Add sliced onions, green peppers, mustard, stir & remove from heat.
Step #8 Arrange macaroni in a buttered 2 1/2 or 3-quart casserole.
Step #9 Pour mixture over macaroni.
Step #10 Spread the remaining c of shredded cheese over top of macaroni mixture.
Step #11 Sprinkle top paprika on top.
Step #12 Bake, uncovered, at 350 degrees for 30 mins.
Step #13 If you like ham, put two c of lean cubed cooked ham in the mixture before pouring over macaroni.
