Magic Mayonnaise Recipe

Ingredients
  • Meringue:
  • 15 oz Milk; sweetened condensed
  • 1 ts Lemon zest
  • 1/3 c Sugar
  • Lemon filling:
  • 1/4 lb Butter or margarine,
  • 2 Egg whites
  • 18 Graham cracker squares
  • Graham cracker crust:
  • 1/8 ts Cinnamon
  • 1/2 c Lemon juice
  • 2 Egg yolks
  • 1/4 ts Cream of tartar
  • 4 tb Sugar

Directions
  • Step #1 Thoroughly mix crust ingredients & pack into a nine inch pie pan.
  • Step #2 bake this at 375 degrees for 10 mins & put aside to cool.
  • Step #3 Reduce oven temperature to 325F degrees.
  • Step #4 In a mixing bowl, lemon juice, mix condensed milk, lemon zest & egg yolks.
  • Step #5 Stir until mixture thickens.
  • Step #6 pour this into cooled crust.
  • Step #7 Add cream of tartar to the egg whites and beat until almost stiff.
  • Step #8 Add sugar slowly, beating until stiff and glossy but not dry.
  • Step #9 Pile lightly on pie filling.
  • Step #10 bake this at 325F until lightly browned, about 15 mins.
  • Step #11 Cool thoroughly.
  • Step #12 Enjoy! Hint: try to get the crust thickness very even & not too thick.
