Mah Ki Dal (whole Black Beans) Recipe

Ingredients
  • 2 c Heavy cream
  • 2 qt Chicken stock
  • 1 tb White pepper
  • Salt
  • 1 sm Leek; white & green parts separated
  • 4 lb Potatoes; peeled & cut into 1/2" cubes
  • Shredded cheddar for garnish
  • 1/4 c Cornstock
  • 1 qt Whole milk
  • Crumbled, cooked bacon for garnish

Directions
  • Step #1 In a stock pot, simmer about half the potatoes & the white portion of the leeks in enough chicken stock to cover until tender, about 30 mins.
  • Step #2 In another pot cook remaining potatoes in the remaining chicken stock until tender.
  • Step #3 Puree the potatoes & leeks from the first pot in a food processor/blender or mixer.
  • Step #4 Return to pot over med-heat/flame.
  • Step #5 Dissolve cornstarch, pepper, & salt in a little of the cream & stir in theto the pot.
  • Step #6 When mixture begins to thicken, slowly stir in the remaining cream, the milk & the contents of the second pot.
  • Step #7 Serve hot, topped with a generous portion of cheddar cheese, bacon & sliced green portion of leek.
