Mahi Mahi With Spicy Papaya Salsa Recipe

Ingredients
  • 2 tb Syrup from stem ginger
  • 5 lg Egg yolks
  • 2 tb Vanilla extract
  • 1 c Half & half
  • Mint sprigs
  • 2 c Whipping cream
  • 1/3 c Minced drained stem ginger - in syrup
  • 1/2 c Sugar

Directions
  • Step #1 mix cream, half & half, sugar & salt in heavy medium saucepan.
  • Step #2 Bring to simmer, stirring until sugar dissolves, about 8 mins.
  • Step #3 Whisk yolks in medium bowl to mix.
  • Step #4 slowly whisk cream mixture into yolks.
  • Step #5 Return to saucepan.
  • Step #6 Stir over med-heat/flame until custard thickens & leaves path on back of spoon when finger is drawn across, about 4 mins; do not boil.
  • Step #7 Strain custard into large bowl.
  • Step #8 Cool to about room temp.
  • Step #9 Stir stem ginger, syrup & vanilla into custard.
  • Step #10 Cover & put in the fridge until well chilled, or overnight.
  • Step #11 Process custard mixture in ice cream maker according to manufacturer's instructions.
  • Step #12 Freeze in covered container.
  • Step #13 (Can be prepared 2 days ahead.
  • Step #14 Let soften slightly in refrigerator if necessary.
  • Step #15 ) Scoop ice cream into bowls.
  • Step #16 Garnish with mint sprigs and serve.
