Make-ahead Brunch Casserole Recipe

Ingredients
  • 1/4 ts Ground red pepper
  • 1/4 c Shredded Cheddar cheese
  • 3/4 ts Dry mustard
  • 6 slices white bread cut into 1/2-inch cubes
  • 2 Cloves garlic, minced
  • 2 cartons frozen egg substitute, thawed
  • 3 Green onions, sliced
  • 3/4 lb Lean ground pork
  • Cherry tomatoes
  • 3/4 ts Italian Spice uping
  • Vegetable cooking spray
  • Green onion tops
  • 1/4 ts Fennel seeds, crushed
  • 1 c Skim milk
  • 1/4 ts Salt

Directions
  • Step #1 Directions: Coat a skillet with cooking spray; place over medium heat until hot.
  • Step #2 Add next 4 ingredients; cook this until meat is browned, stirring to crumble meat.
  • Step #3 Drain in a colander; pat dry with paper towels, & set aside.
  • Step #4 mix milk & next 6 ingredients in a large bowl; stir well.
  • Step #5 Add pork mixture & bread, stirring just until well mixed.
  • Step #6 pour this into an 11- x 7- x 2-inch baking dish coated with cooking spray.
  • Step #7 Cover & chill 8 to 12 hrs.
  • Step #8 Bake, uncovered, at 350 degrees for 50 mins or until set & lightly browned.
  • Step #9 Garnish with tomatoes & onion tops, if desired.
  • Step #10 Yield: 6 servings (serving size: 1 [3 3/4- x 3 1/2-inch] piece).
