Make-ahead: Baked Curried Beef & Sweet Pota Recipe

Ingredients
  • 1 Sweet yellow pepper, sliced
  • 3 Garlic cloves, minced
  • 1/2 ts Dried rosemary
  • 2 Zucchini, sliced
  • 1 lb Penne pasta
  • Salt
  • 1/4 c Olive oil
  • 1/2 c Fresh parsley, sliced
  • 1/2 lb Mozzarella, shredded
  • 1 Sweet red pepper, sliced
  • 2 tb Fresh basil, sliced, or 2 ts dried
  • 1/2 lb Mushrooms, quartered
  • 1 c Parmesan, freshly grated
  • Pepper
  • 1 sm Eggplant, sliced
  • 1/2 lb Fontina cheese, sliced

Directions
  • Step #1 In large shallow pan, eggplant, toss together peppers, zucchini, mushrooms, garlic & oil; spread onto rimmed baking sheet.
  • Step #2 Bake in 500F 260C oven, stirring once or twice, for about 20 mins or until softened.
  • Step #3 Transfer to greased 13x9-inch baking dish.
  • Step #4 Spice up this with salt & pepper to taste.
  • Step #5 stir in the 1/3 c of the parsley, basil and rosemary.
  • Step #6 Meanwhile, in large pot of boiling salted water, cook pasta until tender but firm.
  • Step #7 Drain well & rinse under cold water; let cool.
  • Step #8 Add to baking dish along with spaghetti sauce, mozzarella, Fontina and half of the Parmesan; toss to mix.
  • Step #9 Sprinkle top with remaining Parmesan & parsley.
  • Step #10 [Can be prepared to this point, covered & put in the fridged for up to 1 day.
  • Step #11 Bring to about room temp.
  • Step #12 ][When cooking pasta for a casserole that is not going to be baked right away, undercook slightly, then rinse under cold water.
  • Step #13 ] Bake in 375F 190C oven for 35-40 mins or until bubbly.
  • Step #14 8 servings for $20.
