Malaysian Chicken Curry In Coconut
Ingredients
2 md Garlic Cloves, Crushed
2 ts Plum Jam
1 md Cucumber
2 ts Ginger Powder
2 lg Tomatoes, sliced
2 ts Salt
3 c Coconut Milk
1/2 c Ghee Or Butter
1 pn Cayenne Pepper
5 md Onions, sliced
1 tb Lemon Juice
3 tb Unbleached All-Purpose Flour
1 lb Lobster Meat
3 tb Curry Powder
Directions
Step #1 Peel & cube the cucumber; cube the lobster meat.
Step #2 Heat the butter and saute the onions & garlic for 10 mins.
Step #3 Add the ginger, salt, cayenne, curry powder & tomatoes.
Step #4 Cover & cook over low heat/flame for 10 mins, stirring frequently.
Step #5 stir in the the flour & add the coconut milk slowly.
Step #6 Continue to stir until boiling, then simmer 2 mins.
Step #7 Add the cucumber & lobster meat & continue cooking, over low heat/flame, for 15 mins.
Step #8 mix the lemon juice & jam then add to the lobster mixture, mixing well.
Step #9 Serve hot with boiled rice.
