Malaysian Curry Paste Recipe

Ingredients
  • 2 md Garlic Cloves, Crushed
  • 2 ts Plum Jam
  • 1 md Cucumber
  • 2 ts Ginger Powder
  • 2 lg Tomatoes, sliced
  • 2 ts Salt
  • 3 c Coconut Milk
  • 1/2 c Ghee Or Butter
  • 1 pn Cayenne Pepper
  • 5 md Onions, sliced
  • 1 tb Lemon Juice
  • 3 tb Unbleached All-Purpose Flour
  • 1 lb Lobster Meat
  • 3 tb Curry Powder

Directions
  • Step #1 Peel & cube the cucumber; cube the lobster meat.
  • Step #2 Heat the butter and saute the onions & garlic for 10 mins.
  • Step #3 Add the ginger, salt, cayenne, curry powder & tomatoes.
  • Step #4 Cover & cook over low heat/flame for 10 mins, stirring frequently.
  • Step #5 stir in the the flour & add the coconut milk slowly.
  • Step #6 Continue to stir until boiling, then simmer 2 mins.
  • Step #7 Add the cucumber & lobster meat & continue cooking, over low heat/flame, for 15 mins.
  • Step #8 mix the lemon juice & jam then add to the lobster mixture, mixing well.
  • Step #9 Serve hot with boiled rice.
