Malu Hodhi (fish Curry) Recipe

Ingredients
  • 1 ts Lemon juice
  • 1 tb Dry white wine
  • 5 tb Fresh whipped cream
  • 2 Egg yolks, slightly beaten
  • 1 tb White wine vinegar
  • Salt
  • 3 tb Chicken stock
  • 1 Green onion, finely sliced
  • White pepper
  • 1/2 c Butter, cut in small pieces
  • 1/2 Blood orange or reg. ogange

Directions
  • Step #1 3 to 5 tbsps of REAL whipped cream.

  • Step #5 This sauce needs to be made with extra care.
  • Step #6 Cut peel from half the orange, removing only the colored portion.
  • Step #7 Cut peel into fine narrow strips.
  • Step #8 Blanch peel briefly in boiling water, if desired.
  • Step #9 Finely chop peel, if desired; set aside.
  • Step #10 Juice orange; set aside.
  • Step #11 In a small skillet, simmer green onion 5 mins over low heat/flame in wine, vinegar & stock.
  • Step #12 Strain well, discarding green onion; cool slightly.
  • Step #13 Place egg yolks & wine mixture in a small enamel-lined saucepan.
  • Step #14 Place over hot water or use a double-boiler.
  • Step #15 Water should be barely simmering at any time.
  • Step #16 If mixture is over heated it will curdle and must be remade from new ingredients.
  • Step #17 Add butter, one piece at a time, mixing well & making sure each piece is fully incorporated before adding the next.
  • Step #18 If desired use a whisk to beat butter into yolk mixture.
  • Step #19 When all butter has been added, sauce should be fairly thick & creamy.
  • Step #20 Add lemon juice, white pepper, salt, balnched orange peel & juice.
  • Step #21 Fold in whipped cream before serving.
  • Step #22 Serve as soon as possible to prevent sauce from seperating.
  • Step #23 This sauce is delicious with delicate fish or vegetable dishes, such as asparagus.
  • Step #24 It is also very good with broiled meat.
