- 1/2 c Cracker crumbs
- 1 c Onion, sliced
- 1 tb Butter, melted
- Pepper, black
- 2 ea Bacon, slices
- 1 ea Eggplant, medium, pared, cub ed
- 1/3 c Milk
- 1 tb Sugar, granulated
- Salt
Directions
- Step #1 Boil eggplant & onion in small amount of salted water.
- Step #2 Drain and mash.
- Step #3 add in the remaining ingredients, except bacon, mix well & turn into a buttered 1 1/2 quart casserole.
- Step #4 bake this at 350 degrees for 30 mins until firm.
- Step #5 top this with bacon, return to oven & bake this until bacon is browned.
