Mama's Rhubarb Pie Recipe

Ingredients
  • 2 tb Oil
  • 2 md Sized carrots; peeled and thinly sliced
  • 1 c Onions; finely sliced
  • 2 c Monterey Jack cheese; cut into small cubes
  • 1/2 c Green chilies; sliced
  • 2 ts ;salt or to taste
  • 4 Cloves garlic; minced
  • 1 tb Flour
  • 1 ts Black pepper
  • 3 md Tomatoes; peeled & sliced
  • 2 1/2 c Raw potatoes; peeled and cut into small cubes
  • 2 qt Chicken broth; hot
  • 1 md Sized zucchini; thinly sliced

Directions
  • Step #1 Heat oil in 3-quart saucepan & add garlic, onions, tomatoes and green chilies; saute for 3 mins.
  • Step #2 stir in the flour & cook for 2 more mins.
  • Step #3 Continue stirring as you pour in the hot broth.
  • Step #4 Add potatoes, salt & pepper.
  • Step #5 Cover pan & let simmer over low heat/flame for 20 mins.
  • Step #6 Add carrots & zucchini & cook for 15 mins longer or until potatoes are tender.
  • Step #7 Just before serving add the cubed cheese.
  • Step #8 Makes 4 to 6 servings.
