Mama's Southern Hush Puppies Recipe

Ingredients
  • 2/3 c Whipping cream
  • 2 1/2 tb Dry sherry
  • 2/3 c Chicken broth
  • 1/8 ts Ground white pepper
  • 1/3 c All-purpose flour
  • 1 1/2 lb Unpeeled medium-size fresh shrimp
  • 1/2 pk Vermicelli or thin spaghetti
  • 1/3 c Butter or margarine
  • 1/2 ts Salt
  • 2 tb Grated parmesan cheese
  • 4 1/2 c Water
  • 3/4 c Shredded Swiss cheese
  • 2 tb Slivered almonds

Directions
  • Step #1 Bring water to a boil; add shrimp, & cook 3 to 5 mins or until shrimp turn pink.
  • Step #2 Drain well; rinse with cold water.
  • Step #3 Chill.
  • Step #4 Peel and devein shrimp; set aside.
  • Step #5 Cook vermicelli according to directions; drain.
  • Step #6 Melt butter in a saucepan over low heat/flame; stir in the flour.
  • Step #7 Cook 1 min, stirring constantly.
  • Step #8 slowly add broth & cream; cook over medium heat, stirring constantly, until thickened.
  • Step #9 stir in the Swiss cheese, salt, sherry, & pepper.
  • Step #10 remove this from heat; stir in the shrimp & vermicelli.
  • Step #11 Spoon mixture into a greased 2-quart casserole; Sprinkle top with parmesan cheese & almonds.
  • Step #12 Bake, uncovered, at 350 for 20 mins or until heated.
  • Step #13 Broil 5 1/2 inches from heat 6 mins or until browned.
