Mandalay Green Beans Recipe

Ingredients
  • 2 sm Zucchini, sliced
  • 2 Dried
  • 1 Bay leaf
  • 1/4 c sliced walnuts
  • 1 sm Onion -- cut up
  • Frozen peas
  • Pasilla chilies --
  • 4 Sprigs cilantro or parsley
  • 1/2 ts Dried oregano -- crushed
  • 1 12oz can
  • 2 c Water
  • 2 Green tipped bananas --
  • 1/2 ts Dried thyme -- crushed
  • 2 Firm pears
  • 1 10oz pkg
  • 2 lb Boneless pork
  • 2 Tart cooking apples
  • 2 Dried
  • 1 Garlic clove cut up
  • 1 cn Pineappl 8-1/4 oz,drained
  • Ancho chilies --
  • 2 Whole cloves
  • Sliced
  • Tomatillos

Directions
  • Step #1 or sub.
  • Step #2 1 tsp.
  • Step #3 crushed red pepper for the dried ancho & pasilla chilies) Cut chilies open.
  • Step #4 Discard stems & seeds.
  • Step #5 Cut chilies into small pieces with scissors or a knife.
  • Step #6 place this in bowl; cover with boiling water.
  • Step #7 let this stand 45 to 60 mins; drain.
  • Step #8 Cut pork in 1 inch cubes.
  • Step #9 In Dutch oven mix pork, oregano, cloves, bay leaf, thyme, water, 1 tsp.
  • Step #10 salt, & 1/8 tsp.
  • Step #11 pepper.
  • Step #12 Cover & let simmer 40 mins or till pork is nearly tender.
  • Step #13 Drain pork, reserving 2 c broth.
  • Step #14 Rinse, drain, & halve tomatillos.
  • Step #15 In mixer container mix the tomatillos, cilantro, the drained peppers or crushed red pepper, onion, garlic, & reserved broth.
  • Step #16 Cover & mix till smooth.
  • Step #17 Peel, core, & slice apples & pears; add to pork along with tomatillo mixture & zucchini.
  • Step #18 Cover & let simmer 10 mins.
  • Step #19 Add peas, pineapple, bananas, & walnuts; simmer 5 mins more.
  • Step #20 Makes 8 servings.
