Collard Greens Recipe

Ingredients
  • 4 tsps white sugar
  • 2 bunches collard greens
  • 8 c water
  • 1/2 c cider vinegar
  • salt to taste
  • 6 oz salt pork

Directions
  • Step #1 Place the pork, water & salt in a medium size pot.
  • Step #2 Bring to a boil over medium high heat.
  • Step #3 Skim off any fat that rises to the top.
  • Step #4 Reduce temperature to low & let simmer for 30 mins.
  • Step #5 Meanwhile, prepare greens.
  • Step #6 Discard damaged or yellow parts of leaves.
  • Step #7 Cut away the tough ends from each leaf.
  • Step #8 Place greens in a colander, & wash thoroughly until rinse water is clear of dirt.
  • Step #9 Fold each leaf in half at its center vein, fold over once or twice more, then cut in half.
  • Step #10 Stir prepared greens into the simmering liquid.
  • Step #11 Let simmer all together for approximately 1 hr over low heat/flame.
  • Step #12 Ladle into shallow bowls, & add sugar & cider vinegar to each bowl.
  • Step #13 Serve.
