Mandarin Rock Cornish Hens Recipe

Ingredients

1 c Drained mandarin orange
1/2 c Mandarin orange liquid
1/2 c Raisins
3 Eggs; beaten
Sections
1 c Undiluted evaporated milk
1 ts Vanilla
1/2 c Light brown sugar
3 tb Butter; melted
2 1/2 c Cooked rice

Directions

Step #1 mix rice with all ingredients except orange sections.
Step #2 Mix well.
Step #3 Lightly butter crockpot.
Step #4 Pour in rice mixture.
Step #5 Cover & cook on LOW for 4 to 6 hrs or on HIGH for 2 to 3 hrs.
Step #6 Stir during first 30 mins.
Step #7 During last half-hr, stir in the orange sections.
Step #8 NOTE: For classic rice pudding use 1/2 c evaporated milk & 2 tsp vanilla.
Step #9 Raisins are optional.
Step #10 Omit orange liquid & sections.
