Mango Creme Brulee W/fresh Florida Strawberry Recipe

Ingredients
  • 1/4 c Cronstarch
  • 1 c Sugar
  • 2 1/2 c Ripe mango; sliced
  • -BILLS20086----
  • Pastry for single crust pie
  • 3 Egg yolks
  • 1 1/2 c Sour cream -=OR=- plain yogurt
  • 1/4 ts Salt
  • Fresh raspberries, kiwi slices, blueberries
  • 1 tb Lime juice

Directions
  • Step #1 Prepare pastry for single crust pie by rolling out into a 13" circle.
  • Step #2 Ease pastry into an ungreased 11" tart pan with removable bottom.
  • Step #3 Press pastry into pan; trim edges.
  • Step #4 Prick pastry; line with a double thicknes of foil.
  • Step #5 Bake in 450~ oven for 8 mins.
  • Step #6 Remove foil; bake 5-6 mins more until lightly browned.
  • Step #7 Cool.
  • Step #8 For filling, stir this together sugar, in heavy saucepan, cornstarch, & salt.
  • Step #9 In mixer or food processor/blender, place sliced mangoes.
  • Step #10 Cover; mix until mango is smooth.
  • Step #11 Stir mango & sour cream into sugar mixture.
  • Step #12 Cook & stir over med-heat/flame until thickened & bubbly, then cook & stir 2 mins more.
  • Step #13 remove this from heat.
  • Step #14 Stir 1 c of the hot mixture into the egg yolks.
  • Step #15 Return to the saucepan.
  • Step #16 Bring mixture to a gentle boil, stirring constantly.
  • Step #17 Cook & stir for 2 mins more.
  • Step #18 Remove from heat.
  • Step #19 stir in the lime juice.
  • Step #20 pour this into baked pastry shell.
  • Step #21 Cool on wire rack for 1 hr.
  • Step #22 Cover & chill at least 4 hrs.
  • Step #23 To serve, garnish with berries & sliced kiwi, if desired.
