Mango In Lime Syrup Recipe

Ingredients
  • 1 Peach mango peeled sliced
  • Fresh fruit or mint sprigs
  • Garnish:
  • 2/3 c Icing sugar
  • 1 Pawpaw peeled sliced
  • 1 tb Lemon juice
  • 1/2 c Thickened cream
  • 1 tb Ground almonds
  • 1/4 c Fresh coconut milk
  • 4 Egg yolks

Directions
  • Step #1 Puree the mango & pawpaw together with the lemon juice.
  • Step #2 Beat the eggs & icing sugar in the top of a double boiler until the eggs are pale & thick.
  • Step #3 remove this from the heat, pour this into a bowl & continue to beat until the mixture is cool.
  • Step #4 Fold the fruit puree into the egg mixture & add the cream, coconut milk & almonds.
  • Step #5 Pour the mixture into a mould or freezer tray & freeze for 2-3 hrs.
  • Step #6 To serve: dip the mould into hot water for 30 seconds before turning out, or scoop out as ice cream balls.
  • Step #7 Garnish with fruit or fresh mint sprigs.
