Mango Key Lime Margaritas Recipe

Ingredients
  • 1/8 ts Cinnamon, ground
  • 1 Cloves, whole
  • 2 oz Vinegar
  • 1/2 ts Allspice, ground
  • 1 ts Salt
  • 1/2 c Wine, white
  • 1 tb Ginger, ground
  • 4 md Mangoes
  • 1/2 c Sugar, raw
  • 1/2 ts Pepper, cayenne

Directions
  • Step #1 Peel the mangoes & discard the center pit.
  • Step #2 Remove pulp & puree in food processor/blender or mixer.
  • Step #3 add in the remaining ingredients & puree until well mixd.
  • Step #4 In heavy saucepan over low heat/flame, cook mixture until reduced and thickened.
  • Step #5 remove this from heat & allow this to cool.
  • Step #6 Strain mixture through fine sieve.
  • Step #7 put in the fridge overnight to allow flavors to meld.
  • Step #8 Chefs Notes: Peel mango, using very sharp knife as if it were a potato.
  • Step #9 Lay the fruit flat on counter & slice lengthwise above and underneath the large seed.
  • Step #10 Trim off any fruit remaining on seed.
  • Step #11 Discard seed & skin.
