Mango-habanero Sauce Recipe

Ingredients
  • 1 ea 3" piece ginger, grated
  • 2 ea Cinnamon sticks
  • 1 ts Salt
  • 3 c Sugar
  • 3 lg Mangoes
  • 3 c White vinegar
  • 4 ea Serrano chiles
  • 1 c Golden raisins
  • 1 ea Garlic clove, sliced
  • 1 c Dates, sliced

Directions
  • Step #1 Peel the mangoes, cut off the flesh & dice into 1-inch pieces.
  • Step #2 mix the sugar & vinegar in a large saucepan & bring to a boil.
  • Step #3 Add the mangoes & the remaining ingredients to the sugar mixture & bring to a boil.
  • Step #4 Reduce the heat to a medium simmer and cook uncovered for 45 mins to 1 hr, or until the mixture has reduced a little & is thickened.
  • Step #5 Remove the cinnamon.
  • Step #6 Ladle into warm jars cleaned by the dishwasher method, leaving 1/4-inch space for expansion.
  • Step #7 Secure with lids washed & heated according to directions.
  • Step #8 Place warm jars in boiling water in large stock pot or canner, being sure water covers the tops by about 2 inches.
  • Step #9 Boil 10 mins.
  • Step #10 remove this from the water & set on board or towel to cool.
  • Step #11 store this in cool place until ready to label & deliver.
