Crispy Orange Roughy Recipe

Ingredients
  • 1 tbsp olive oil or vegetable oil
  • 1/3 c lemon juice
  • 1/4 tsp pepper
  • 2 tsps dried oregano
  • 2 c instant mashed potato flakes
  • 1/4 tsp salt
  • 4 (6 oz) fillets orange roughy, cod or haddock

Directions
  • Step #1 Line a baking sheet with aluminum foil & spray with nonstick cooking spray; set aside.
  • Step #2 In a shallow bowl, oregano, oil, whisk together the lemon juice, salt & pepper.
  • Step #3 Place the potato flakes in another bowl.
  • Step #4 Dip fillets in lemon juice mixture, then coat with potato flakes.
  • Step #5 Place on prepared pan.
  • Step #6 Bake at 500 degrees F for 10 mins or until fish flakes easily with a fork & is golden brown.
