Step #4 EDU Rinse unpeeled lime, then thinly slice; discard seeds.
Step #5 Place lime slices i a heavy bottomed 8 to 10 quart pan; mix in sugar, allspice, vinegar, onion, garlic cinnamon, cloves, salt, red pepper, & raisins.
Step #6 Bring to a boil overhigh heat; then reduce heat to medium-low & let simmer, uncovered, stirring every once in awhile to prevent sticking, until onion is limp & syrup is slightly thickened (about 15 mins).
Step #7 Meanwhile, peel mangoes; slice fruit off pits & cut into 1-1/2 inch piece (you should have about 3-1/2 c).
Step #8 Peel, pit, & slice peaches.
Step #9 Add mangoes & peaches to syrup & let simmer, stirring often to prevent sticking, uncovered, until peaches are tender when pierced & chutney is thickened (about 3 mins).
Step #10 Process in boiling water canner as above.
