Manhattan Clam Chowder Vi Recipe

Ingredients
  • 3 c Bottled clam juice
  • 1/4 c Green pepper
  • 1/2 c sliced bacon
  • 1/2 ts Thyme
  • 2 c sliced clams
  • 2 tb Butter
  • 1 c sliced onions
  • 2 c sliced potatoes
  • 2 tb Tomato paste or ketchup
  • 2 tb Flour

Directions
  • Step #1 PLACE BACON, ONION, stirring, PEPPER & butter in a 3-quart pot over medium heat & cook, 10 mins.
  • Step #2 Sprinkle top with flour & mix.
  • Step #3 Add the clam juice, clams, thyme & tomato paste.
  • Step #4 Cover, bring to a boil & let simmer for 15 mins.
  • Step #5 Add potatoes, replace cover & cook this until potatoes are tender, another 10 to 15 mins.
  • Step #6 Taste for salt and pepper.
  • Step #7 Serve piping hot.
