Maple Glazed Carrots Recipe

Ingredients
  • 1/4 c Maple syrup
  • 1/2 c Butter or margarine
  • 32 oz Sweet potatoes; drained
  • 1/2 c Salted sunflower nuts

Directions
  • Step #1 Or 2 lbs.
  • Step #2 fresh sweet potatoes, pared & cooked in water to cover until tender.
  • Step #3 1.
  • Step #4 Place butter in baking dish & place this in oven to melt as oven preheats.
  • Step #5 2.
  • Step #6 Prepare potatoes.
  • Step #7 They should be left whole if small, or cut into 2-inch chunks if large.
  • Step #8 3.
  • Step #9 Turn potatoes in melted butter in baking dish until coated on all sides.
  • Step #10 4.
  • Step #11 Drizzle syrup evenly over potatoes 5.
  • Step #12 Sprinkle top with the sunflower nuts.
  • Step #13 6.
  • Step #14 bake this at 350' for 25-30 mins or until heated through.
  • Step #15 7.
  • Step #16 Transfer to serving dish.
  • Step #17 Servings - 4 You can prepare the dish ahead & bake it just before serving.
  • Step #18 I've made this the last couple of years & everyone seems to like it even better than the marshmallow-topped ones.
