Maple Sugar Filling & Frosting^ Recipe

Ingredients
  • Unsalted butter; softened
  • 3/4 c Sugar
  • 1 pn Salt
  • Creme fraiche
  • 1/2 c Unsalted butter; melt/cool
  • 2 ts Baking powder
  • 1 c Maple syrup
  • 1 ts Vanilla extract
  • 2 c Flour
  • 1 c Milk

  • Step #2 With a few modifications, it has become one of my standby quick-and-easy desserts.
  • Step #3 The sauce poured over the top ends up on the bottom.
  • Step #4 Preheat an oven to 350 degrees F.
  • Step #5 Butter a 2-quart glass casserole or other baking dish.
  • Step #6 In a bowl, flour, mix the sugar, baking powder, & salt & stir to mix well.
  • Step #7 Whisk in the milk & 1/4 c of the butter to mix well.
  • Step #8 Scrape the fairly stiff batter into the prepared baking dish.
  • Step #9 In a saucepan, bring the syrup to a boil.
  • Step #10 remove this from the heat and stir in the the remaining 1/4 c butter & the vanilla.
  • Step #11 as soon as possible pour the mixture over the pudding batter.
  • Step #12 bake this until puffy, & golden brown, bubbling, 35 to 45 mins.
  • Step #13 Serve warm.
  • Step #14 Offer creme fraiche or a pitcher of cream for topping the pudding at the table.
