Maraschino Cherry Cake Recipe

Ingredients
  • 4 1/2 lb Pitted red cherries
  • 3 c Water
  • 4 1/2 lb White sugar
  • 1 oz Red coloring
  • 1 oz Almond extract
  • Juice of 1 lemon

Directions
  • Step #1 ---BRINE------ 2 qt Water 2 tb Salt 1 ts Alum Soak pitted cherries overnight in heated brine.
  • Step #2 The next morning, drain cherries.
  • Step #3 Rinse in cold water.
  • Step #4 mix cherries, water, lemon juice, sugar, & red coloring.
  • Step #5 Heat to boiling point.
  • Step #6 let this stand 24 hrs.
  • Step #7 Again boil juices, pour over cherries & let this stand 24 hrs.
  • Step #8 Bring to boil again.
  • Step #9 Add almond extract & cherries.
  • Step #10 Pack in hot sterilized jars & seal.
  • Step #11 Water Bath Time from The Ball Blue Book- pints 20 min, quarts 25 min.
