Banana Coconut Cream Pie *jb Recipe

Ingredients
  • 1 ts Salt
  • 1/2 ts Grated nutmeg
  • 2 ts Cinnamon
  • 1 ts Baking soda
  • 3 c Flour
  • 1 ts Baking powder
  • 1/3 c Buttermilk
  • 1/2 c Dark rum
  • 2 ea Eggs beaten lightly
  • 1 c Mashed ripe banana
  • 1 c Packed brown sugar
  • 2/3 c Sweetened coconut
  • 1 c Currants
  • 1/2 c Vegetable shortening

Directions
  • Step #1 Heat rum & place this in bowl with currants 1 hr.
  • Step #2 In separate bowl, baking soda, baking powder, sift together flour, cinnamon, sal, nutmeg, & 1/2 c of the coconut.
  • Step #3 In a large bowl, cream vegetable shortening & brown sugar till mixd.
  • Step #4 Add eggs & beat well.
  • Step #5 stir in the buttermilk, banana & currant mixture.
  • Step #6 mix well.
  • Step #7 Add flour mixture & stir till just mixd.
  • Step #8 Spoon batter into greased loaf pan 9"x5"x2 3/4".
  • Step #9 Sprinkle top with remaining coconut & bake in preheated 350 F degree oven 60 to 70 mins or till don.
  • Step #10 Makes 1 loaf.
