Cranberry Muffins Recipe

Ingredients
  • 1/2 tsp ground ginger
  • 1 1/2 tsps ground nutmeg
  • 1 1/2 tsps baking powder
  • 2 tbsps brown sugar, packed
  • 1 (8 oz) can whole cranberry sauce
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 3/4 c orange juice
  • 1/4 c margarine
  •  
  • 1 c white sugar
  • 1 tsp ground cinnamon
  • 1 1/2 c sliced walnuts
  • 2 eggs, beaten
  • 2 tsps orange zest
  • 2 c all-purpose flour
  • 1/2 c shortening
  • 1 1/2 c sliced cranberries

Directions
  • Step #1 Preheat oven to 350 degrees F (175 degrees C).
  • Step #2 Spray or grease a 12 c & 6 c muffin tin.
  • Step #3 Mix together the flour, baking powder, nutmeg, baking soda, orange peel, sugar, cinnamon & ginger.
  • Step #4 Cut in shortening; stir in the juice, eggs, vanilla, cranberries & nuts.
  • Step #5 Pour into muffin c & bake for 25 mins or until brown.
  • Step #6 Prepare the topping in a saucepan over low heat/flame by whisking together the cranberry sauce, brown sugar & margarine.
  • Step #7 Cook until heated & smooth.
  • Step #8 Remove from heat & serve as a spread for the muffins.
