Banana Stuffed French Toast Recipe

Ingredients
  • Pastry for single crust pie
  • 1/2 ts Ground cinnamon
  • -BILLS20086----
  • 1/2 c Unsweetened pineapple juice
  • 1/4 c Sugar
  • 1 1/2 ts Finely shredded lemon peel
  • 1 ts Cornstarch
  • 4 c Ripe bananas; sliced
  • 2 tb Lemon juice

Directions
  • Step #1 --STREUSEL----- 1/2 c Flour 1/2 c Brown sugar; packed 1/3 c Macadamia nuts; sliced 1 ts Ground cinnamon 1/4 c Butter or margarine Prepare & roll out pie crust.
  • Step #2 Place pastry in 9" pie plate.
  • Step #3 Line the unpricked pastry shell with a double thickness of foil.
  • Step #4 Bake in a 450~ oven for 8 mins.
  • Step #5 Remove foil.
  • Step #6 Bake 4-6 mins more or until pastry is golden.
  • Step #7 remove this from oven.
  • Step #8 Reduce oven temperature to 375~.
  • Step #9 Meanwhile, in medium mixing bowl carefully toss together bananas, pineapple juice, & lemon juice.
  • Step #10 Drain, reserving juices.
  • Step #11 carefully toss bananas with lemon peel, sugar & cinnamon.
  • Step #12 Turn mixture into pastry shell.
  • Step #13 In a small saucepan, mix the reserved juices and cornstarch.
  • Step #14 Cook & stir over med-heat/flame till thickened & bubbly.
  • Step #15 Pour over banana mixture in shell.
  • Step #16 For streusel, brown sugar, mix the flour, nuts & cinnamon.
  • Step #17 With a pastry mixer or 2 forks, cut in the butter until mixture resembles coarse crumbs.
  • Step #18 Sprinkle top it over banana mixture.
  • Step #19 Cover edge of pie with foil.
  • Step #20 Bake in a 375~ oven for 40 mins or until topping is golden & edges are bubbly.
  • Step #21 Cool on wire rack.
  • Step #22 --.
