Banana-rum Ice Cream Recipe

Ingredients
  • 1/2 ts Nutmeg
  • 2/3 c sliced fresh rhubarb or frozen rhubarb, thawed and well drained
  • 2 c Oat flour mix
  • 1/2 c Sugar
  • 2 Egg whites or 1/4 c cholesterol free egg product
  • 1/2 c Mashed ripe banana
  • 1/4 c Vegetable oil
  • 2/3 c Skim milk
  • 1 tb Baking powder
  • 1/2 ts Salt

Directions
  • Step #1 Yield: Makes 12 Calories: 170 per serving preheat your trusty oven to 400F F.
  • Step #2 Spray bottoms of 12 muffin pan c with vegetable cooking spray or line with paper baking c.
  • Step #3 In medium-sized bowl beat egg whites with fork; stir in the milk & oil.
  • Step #4 add in the remaining ingredients except rhubarb, mixing just until flour is moistened (batter will be lumpy).
  • Step #5 Fold in rhubarb.
  • Step #6 Divide batter among prepared muffin c, filling to top.
  • Step #7 Bake 20 to 25 mins, or until golden brown.
  • Step #8 as soon as possible remove muffins from pan; cool on wire racks.
