Banana-strawberry Frappe Recipe

Ingredients
  • 1 c Sugar
  • 1/2 c Sour cream
  • 2 Eggs
  • 1 ts Vanilla extract
  • 1 c Bananas; mashed
  • 1/2 ts Cinnamon
  • 1/2 c Shortening
  • 1 ts Baking powder
  • 2 c All-purpose flour
  • 1 ts Soda
  • 1/2 c Pecans; sliced
  • 1/4 c Sugar
  • 1/4 ts Salt

Directions
  • Step #1 mix pecans, 1/4 c sugar, & cinnamon; stir well, & set aside.
  • Step #2 mix shortening & 1 c sugar; cream until light & fluffy.
  • Step #3 Beat in eggs, bananas, & vanilla; stir in the saour cream.
  • Step #4 mix remaining dry ingredients; add to creamed mixture, & stir just enough to mix.
  • Step #5 Sprinkle top half of reserved cinnamon mixture into bottom of a well-greased 10inch Bundt pan; spoon half of batter into pan.
  • Step #6 Sprinkle top remaining cinnamon mixture over batter; spoon remaining batter into pan.
  • Step #7 Bakeat 350 degrees for 40 to 45 mins or until cake tests done.
  • Step #8 Cool cake 5 mintus in pan on a wire rack.
  • Step #9 Loosen edges of cake, if necessary.
  • Step #10 Invert cake on serving plate; serve warm or cold.
  • Step #11 Yield: one 10 inch coffee cake.
