Colorful Chicken Casserole Recipe

Ingredients
  • 1 c sliced green pepper
  • 1 c frozen corn
  • 1 c shredded Cheddar cheese
  • 1 (4.5 oz) jar sliced mushrooms, drained
  • 3 c cubed cooked chicken
  • 2 tbsps butter
  • 1 tsp salt
  • 1 c sliced celery
  • 1 c chicken broth
  • 1 c frozen peas
  • 3/4 c sliced onion
  • 1 (7 oz) package elbow macaroni
  • 1/4 tsp pepper

Directions
  • Step #1 In a large skillet, saute celery, green pepper & onion in butter until tender.
  • Step #2 Add broth, corn, peas & salt if desired & pepper; heat through.
  • Step #3 Stir in chicken & spaghetti.
  • Step #4 Divide between two 8-in.
  • Step #5 square baking dishes coated with nonstick cooking spray.
  • Step #6 Top with mushrooms & cheese.
  • Step #7 Cover & freeze one casserole for up to 3 months.
  • Step #8 Cover & bake the second casserole at 350 degrees F for 20 mins.
  • Step #9 Uncover & bake 10 mins longer or until heated through.
  • Step #10 To use frozen casserole: Bake at 350 degrees F for 35 mins.
  • Step #11 Uncover & bake 15 mins longer or until heated through.
