Ingredients
  • 2/3 c Coconut milk
  • 1/4 ts Vanilla
  • 1 c Sugar, granulated
  • 2/3 c Cornstarch
  • 2 c Dry mung beans

Directions
  • Step #1 Dry mash mung beans are available in Oriental food shops.
  • Step #2 Prepare mung beans puree before making cake.
  • Step #3 Soak dry mung beans in hot water for three hrs.
  • Step #4 Rub the beans to remove the hulls, rinse well & pour them off.
  • Step #5 Cook with 1 c water until the beans are done & the water evaporated.
  • Step #6 Stir cooked mung beans with a wooden or plastic spatula until it is smooth.
  • Step #7 Dissolve sugar in coconut milk over low heat.
  • Step #8 Pour mixture into mung bean puree.
  • Step #9 Add vanilla.
  • Step #10 Stir well to make a smooth mixture.
  • Step #11 pour this into a preheated greased baking dish 8 inches in diameter & 3 inches in depth.
  • Step #12 Bake uncovered in a medium oven (350^F) until golden brown (about 1 hr).
  • Step #13 NOTES: Cooked mung beans, sugar, cornstarch, coconut & vanilla can be mixed in a mixer.
  • Step #14 After mixing, bake as indicated above.
