Ingredients
  • 1/3 c Toasted sesame seed [optl]
  • 1 tb Vegetable oil
  • 1 ts Grated lime rind
  • 1/4 c Lime juice
  • 4 Salmon steaks, 1-inch thick [1-1/2 lb]
  • 1 pn Pepper
  • 1 ts Dijon mustard

Directions
  • Step #1 In shallow dish, mustard and pepper; add fish, oil, mix lime rind & juice, turning to coat.
  • Step #2 Cover & marinate at room temperature for 30 mins, turning every once in awhile.
  • Step #3 Reserving marinade, remove fish; Sprinkle top with sesame seed.
  • Step #4 Place on greased grill directly over med-heat/flame.
  • Step #5 Add soaked wood chips.
  • Step #6 Cover & cook, turning & basting with marinade halfway through, for 16-20 mins or until fish flakes easily when tested with fork.
  • Step #7 Per serving: about 225 calories, 30 g protein, 10 g fat, trace carbohydrate.
