Coconut Curd Junket Recipe

Ingredients
  • 1 tsp almond extract
  • 2 1/2 c water, divided
  • 1 c coconut cream
  • 1/4 c milk
  • 4 tbsps superfine sugar
  • 1/4 oz agar-agar

Directions
  • Step #1 In a small pan, dissolve the agar-agar in 1 1/4 c water over med-heat/flame.
  • Step #2 In another pan, coconut cream, milk, mix the sugar, remaining 1 1/4 c water, & almond extract over med-heat/flame until the sugar dissolves.
  • Step #3 Pour the sugar mixture into a bowl then add the agar-agar mixture, making sure to mix well.
  • Step #4 Set in the fridge for 2 to 3 hrs, or until set.
  • Step #5 Cut into cubes & place this in serving bowls, topping with fruit if desired.
