Barbecued Popcorn Recipe

Ingredients
  • 2 tb Olive oil
  • Juice of 1 lemon
  • 2 Dozen pigs' tails
  • 1 c Tomato sauce
  • 1/4 c Tomato paste
  • 1/2 ts Rosemary
  • 1/4 c Brown sugar or syrup [Maple, perchance? S.C.]
  • 2 tb Wine vinegar
  • 1 ts Dry mustard
  • 1 ts Worcestershire sauce
  • 1 Clove garlic, finely sliced
  • Salt & freshly ground pepper to taste

Directions
  • Step #1 We attribute this recipe to the Mennonite colony of Ontario.
  • Step #2 It's often served at picnics & is known as one of the favorite foods at stag parties.
  • Step #3 Prepare pigs' tails according to Step I in basic instructions; cut in 3-inch pieces.
  • Step #4 Place pigs' tails on a rack & bake in a 300F oven for 2 to 3 hrs, until meat is tender & most of the fat has baked off.
  • Step #5 An alternate method to this is to simmer the pigs' tails in acidulated water for 1 1/2 hrs.
  • Step #6 mix all other ingredients for barbecue sauce, coating tails well.
  • Step #7 Grill over hot charcoal, turning & basting, until crisp.
  • Step #8 If fresh rosemary is available, break off several branches, tie them together & use as a basting brush.
  • Step #9 For barbecuing, we prefer leaving the tails uncut or halved so as to have fewer piece to constantly turn.
  • Step #10 serve this with traditional barbecue accompaniments such as corn-on-the- cob, French bread & green salad.
  • Step #11 Serves 6 to 8.
