Barbecued Vietnamese Five-spice Cornish Game Recipe

Ingredients
  • 1 tb White vinegar
  • 1/4 c Lemon juice
  • 2 md Onions,sliced
  • 2 tb Chili powder
  • 1/2 ts Salt
  • To taste
  • Freshly ground black pepper
  • 6 lb Venison ribs with some loin
  • 1/2 c Brown sugar
  • 3 c Ketchup
  • Meat attached
  • 2 1/2 c Water
  • 1/2 c 100% Wisconsin maple syrup
  • 1/2 c Worcestershire sauce

Directions
  • Step #1 preheat your trusty oven to 325F degrees.
  • Step #2 In large bowl,mix all ingredients except ribs & pepper.
  • Step #3 mix well.
  • Step #4 Sprinkle top ribs with pepper and extra salt.
  • Step #5 place this in 5 qt.
  • Step #6 roasting pan in double layer.
  • Step #7 Roast 1 hr.
  • Step #8 pour the sauce over ribs.
  • Step #9 Increase heat to 350 degrees & bake this until ribs just begin to char on top,about 1 1/2 hrs.
  • Step #10 Turn ribs over cover pan & bake about 30 mins longer,until ribs are tender & sauce is thick.
  • Step #11 To serve,place ribs on serving platter.
  • Step #12 pour the sauce over ribs.
  • Step #13 Makes about 6 servings.
  • Step #14 Note: If venison is a little gamey tasting,increase vinegar in sauce to 3 tbsp.
