Basic Irish Sausages / From Irish Traditional Recipe

Ingredients
  • 1 1/2 lb Lean pork
  • Pinch dried sage or marjoram
  • 8 oz Pork fat, without gristle
  • Ground ginger, mace, nutmeg
  • 1 ts Salt
  • 1 oz White breadcrumbs
  • Cloves, cayenne pepper
  • Fresh-ground pepper
  • 1/2 ts Ground allspice

Directions
  • Step #1 Mince the meat & fat twice, then mix very well & Spice up.
  • Step #2 (Fry a tsp or so each time to check the flavor until you get it the way you like it.
  • Step #3 ) Add the herbs & breadcrumbs & any spices used.
  • Step #4 Fill skins as usual.
