1/4 c Minced flat leaf parsley, plus 1/2 tsp ground coriander
1 lb Ripe plum tomatoes, cored and finely sliced but not peeled
1/4 ts Salt
1 Whole clove garlic
1/4 c Minced fresh coriander OR
Directions
Step #1 Keep this savory sauce on hand as a dip for taco chips, a topping for scrambled eggs, or an accompaniment for Tex Mex dishes Prep time: 15 mins Cook time: 2 mins.
Step #2 Drop the garlic into a small saucepan of boiling water.
Step #3 Let boil,uncovered, over moderate heat for 2 mins.
Step #4 Drain well, then mince.
Step #5 Place the minced garlic in a medium sized bowl & mix in the tomatoes,onion, coriander, lim juice, & salt.
Step #6 Cover with plastic food wrap & let this stand at about room temp for 1 hr.
Step #7 Transfer the mixture to a 1 quart preserving jar.
Step #8 Keeps in the refrigerator for 10 days.
Step #9 Makes 2-1/3 c.
Step #10 RED HOT SALSA Increase the garlic to 2 cloves, the lime juice to 1-1/2 tbsp, and add 1 tbsp sliced jalapeno pepper & 1/4 tsp red pepper sauce.
Step #11 Proceed as directed.
Step #12 Makes 2-1/3 c.
