Ingredients
Hot cooked rice
1/2 ts Salt
1 cn unsweetened coconut milk
1/2 ts Ground cumin
5 Cloves garlic, minced
1/2 ts Ground cinnamon
3 tb Snipped fresh basil
2 ts Cornstarch
1 tb Olive oil or cooking oil
1/2 ts Ground coriander
1 lg Red onion, sliced
1/4 ts Ground turmeric
1 sm Red onion, cut into wedges
1/4 ts Chili powder
4 Skinless, boneless chicken breast halves
1/2 ts Cracked black pepper
1 tb Finely sliced gingerroot
2 Jalapeno peppers, seeded and finely sliced
1/2 ts Ground cardamom
1/2 ts Ground cloves
Directions
Step #1 Rinse chicken; pat dry with paper towels.
Step #2 Cut into 1-inch pieces.
Step #3 Place chicken in a medium bowl.
Step #4 In a small bowl stir this together the salt, cardamom, cloves, cinnamon, chili powder, pepper, coriander, cumin, & turmeric.
Step #5 Sprinkle top it over chicken; toss to coat.
Step #6 Cover and let this stand at about room temp for 30 mins or in the refrigerator for 1 to 2 hrs.
Step #7 In a large nonstick skillet cook & stir sliced onion, garlic, and jalapeno in hot oil over medium-high heat for 2 mins.
Step #8 Remove, reserving drippings in skillet.
Step #9 Add about half of the chicken.
Step #10 Cook & stir for 2 to 3 mins or till chicken is tender & no pink remains.
Step #11 Remove chicken from skillet.
Step #12 Cook the remaining chicken, as above, adding extra oil if necessary.
Step #13 remove this from skillet.
Step #14 stir this together coconut milk & cornstarch.
Step #15 Carefully add to skillet.
Step #16 Cook & stir till thickened & bubbly.
Step #17 Add chicken, snipped basil, cooked onion mixture, & gingerroot to skillet.
Step #18 Cook & stir about 2 mins more to heat through.
Step #19 Serve over rice.
Step #20 Garnish with red onion wedges & fresh basil if desired.
Step #21 Per serving: 361 cal.

Step #24 , 350 mg sodium, 11 g carbo.
Step #25 , 1 g fiber, & 24 g pro.

Step #29 Note: Hot peppers contain oils that can burn eyes, & sensitive skin, lips, so handle with care.
