Basmati Rice Pilaf Recipe

Ingredients
  • 1/2 c Dried lentils
  • 2 c Chicken broth
  • 1/4 c ;water
  • 2 Bay leaves
  • 2 tb Walnuts; coarsely sliced and toasted
  • 1 Stick cinnamon
  • 1/2 ts Salt
  • 2 tb Currants
  • 2 c Basmati rice; uncooked
  • 6 Whole cloves
  • 1/4 ts Dried whole thyme
  • 1 tb Plus 2 tsps walnut oil
  • 1/4 ts Coarsely ground pepper
  • 1/4 c Onion; minced

Directions
  • Step #1 Heat oil in a medium saucepan over med-heat/flame.
  • Step #2 Add onion, cloves, & cinnamon; saute for about 2 mins.
  • Step #3 Add rice & lentils and stir well.
  • Step #4 Add chicken broth, pepper, water, salt, thyme, & bay leaves; bring to a boil.
  • Step #5 Cover, reduce heat, & let simmer 25 mins or until liquid is absorbed & lentils appear tender.
  • Step #6 Discard whole spices.
  • Step #7 stir in the walnuts & currants.
