Basmati Rice With Mushrooms~ Broccoli & Oni Recipe

Ingredients
  • Decorative silver leaf
  • 4 1/2 c Water
  • 1/4 c Loosely packed cilantro leaves
  • 1 lg Onion, peeled, halved, and thinly sliced
  • 1/2 ts Garam Masala
  • 1 ts Saffron threads
  • 3/4 c Green lentils
  • 2 c Basmati rice
  • 1 1/4 ts Salt
  • 1 Papaya
  • 1 tb Plus 1 t unsalted butter
  • 1/4 ts Freshly ground pepper

Directions
  • Step #1 1.
  • Step #2 In a small saucepan, bring 2 C of water to a boil.
  • Step #3 Add 1/2 t salt & lentils.
  • Step #4 Reduce heat & sinimer for 20 to 25 mins, or until tender.
  • Step #5 Drain & keep warm.
  • Step #6 2.
  • Step #7 Rinse rice under running water until water runs clear.
  • Step #8 Drain well.
  • Step #9 Bring remaining 2 1/2 C water & 1/4 t of the saffron to a boil.
  • Step #10 In a saucepan, heat 1 T butter over med-heat/flame.
  • Step #11 Add onion, 1/4 t of the saffron, & 1/4 t of the garam masala.
  • Step #12 cook this until onions are soft & transparent.
  • Step #13 Add rice & cook, stirring, for 1 min.
  • Step #14 Add boiling water, 3/4 t salt, & pepper, & return to a boil.
  • Step #15 Reduce heat to low, cover, & allow to simmer for 20 to 25 mins.

  • Step #17 Meanwhile, peel, halve, & seed papaya.
  • Step #18 Cut one half into 1/4-inch cubes & the other half into long 1/4-inch-thick strips.
  • Step #19 In a small skillet, heat 1/2 t butter, add papaya cubes & half of the remaining saffron & garam masala.
  • Step #20 Cook over low heat/flame for 1 min.
  • Step #21 Remove pan from heat & toss papaya together with rice, lentils, & cilantro leaves.

  • Step #23 In same skillet, saute papaya strips with remaining butter, saffron, & garam masala.
  • Step #24 5.
  • Step #25 Top pilaf with papaya strips & garnish with silver leaf, if desired.
