Bass With Avocado Sauce Recipe

Ingredients
  • 3 Med. Potatoes
  • 4 Large Eggs
  • Dash Pepper
  • 1 tb Snipped Parsley
  • 4 Slices Bacon
  • 1/8 ts Dried Thyme, Crushed
  • 2 ts Sliced Green Onions/tops
  • 3/4 ts Salt

Directions
  • Step #1 In 8-inch skillet coo bacon until crisp; drain, reserving 2 T of drippings.
  • Step #2 Crumble bacon & set aside.
  • Step #3 In same skillet mix reserved drippings, parsley, thinly sliced potatoes, salt, peeled, onion, thyme & pepper.
  • Step #4 Cover tightly; cook over low heat/flame til potatoes are barely tender, 20 to 25 mins, stirring carefully once or twice.
  • Step #5 In small bowl beat together eggs & milk; pour over potato mixture.
  • Step #6 Cover & continue cooking over very low heat til egg is set in center, 8 to 10 mins.
  • Step #7 With a wide spatula, loosen sides and bottom & slide potatoes out onto serving plate, or serve from skillet.
  • Step #8 Sprinkle top crumbled bacon atop.
  • Step #9 Serve hot.
