Step #4 Place roast & marinade in large Ziploc bag, or in flat pan & squeeze or turn to thoroughly coat meat.
Step #5 Let marinate 2 days in refrigerator.
Step #6 I made a medium fire in the bottom of the smoker & left out the water pan & placed the roast on the grill for about 20 mins per side.
Step #7 It is supposed to be medium, not well done.
Step #8 You'll have to check for doneness then & if not done to your taste, cook longer.
Step #9 It is FANTASTIC!! Dark brown on the outside & very tender on the inside.
Step #10 I also used the same marinade, doubled, & marinated a whole sirloin tip in a huge stainless steel bowl & smoked it with the water pan & it was great too, but only for a crowd!.
