Marinara Sauce (cleary) Recipe

Ingredients
  • 1/2 c Olive oil
  • 1/3 c Dry white wine
  • 1 ts Oregano
  • 8 lg Ripe tomatoes stemmed & quartered
  • 1 ts Basil
  • 3 md Onions sliced thin
  • 2 Celery sliced fine
  • 1/2 c Tomato paste
  • 1/4 lb Fresh mushrooms sliced thin
  • Salt & pepper
  • 1 ts Thyme
  • 1 pn Sugar

Directions
  • Step #1 Heat olive oil in heavy skillet.
  • Step #2 Saute onions carefully until tender and transparent, about 10 mins.
  • Step #3 Add celery & herbs; cook 5 mins.
  • Step #4 Add tomatoes.
  • Step #5 stir in the salt, pepper, sugar & tomato paste.
  • Step #6 Bring to boil & stir.
  • Step #7 Simmer 35 mins.
  • Step #8 , stirring every once in awhile.
  • Step #9 Add mushrooms & white wine.
  • Step #10 Continue to cook this until sauce is thick, about 15-20 mins.
