Ingredients
  • 1/2 c Fresh parsley, sliced
  • 1 lb Mostaccioli or Ziti; OR other medium pasta shape
  • 2 tb Red wine vinegar
  • 1 tb Fresh sliced thyme
  • 2 c Leftover flank steak or roast beef, julienned
  • 3 tb Lemon juice
  • 2 tb Dijon mustard
  • Salt
  • 1 tb Dried thyme
  • 1 tb Dried oregano
  • 10 lg Mushrooms, sliced
  • 1 Red bell pepper ribs & seeds removed, julienned
  • Freshly ground black pepper
  • 2 c Snow peas, sliced in half
  • 1 tb Fresh sliced oregano
  • 1 Yellow bell pepper ribs & seeds removed, julienned
  • 2 tb Vegetable oil

Directions
  • Step #1 Prepare pasta according to package directions; drain.
  • Step #2 In a large bowl, lemon juice, mix vegetable oil, oregano, vinegar, mustard, thyme, parsley, mushrooms, & beef.
  • Step #3 Add snow peas and peppers & mix thoroughly.
  • Step #4 Add pasta & mix again.
  • Step #5 Serve as soon as possible or put in the fridge for one hr & serve cold.
  • Step #6 Spice up to taste with salt & pepper.
