Marinated Carrot Salad (m_c-tx) Recipe

Ingredients
  • 1/4 c Balsamic vinegar
  • 1/2 ts Salt
  • 2 tb Water
  • 1 md Butternut squash
  • 2 tb Mint; sliced
  • 1/2 ts Pepper; freshly ground

Directions

  • Step #2 258 Peel skin from the squash & cut it in half.
  • Step #3 Carefully remove the seeds and stringy matter.
  • Step #4 Cut the squash into medium dice from the center.
  • Step #5 In a saute pan, put the balsamic vinegar & water, salt & pepper, & heat.
  • Step #6 Add the squash & cook for just a few mins; it should remain firm.
  • Step #7 Remove the squash & liquid from the heat & put into a separate bowl.
  • Step #8 Cool completely.
  • Step #9 Add the sliced mint & serve as a garnish or side dish.
  • Step #10 This is quite good.
  • Step #11 I didn't peel away the skin - just sliced it and then removed the skin - was much easier to do this way for me.
