Marinated Cheese - Sl 11/90 Recipe

Ingredients
  • 4 oz Jar sliced pimiento; drained
  • 8 oz Cream cheese
  • 1 ea envelope Italian dressing mix
  • Garnish: fresh parsley sprigs
  • 2 tb Green onions; minced
  • 8 oz Sharp Cheddar cheese
  • 8 oz Monterey Jack cheese
  • 1/2 c Vegetable oil
  • 1/4 c White vinegar
  • 1 1/2 ts Sugar
  • 2 tb ;water

Directions
  • Step #1 : mix first 6 ingredients in a small jar; cover tightly, and shake vigorously to mix.
  • Step #2 Set aside.
  • Step #3 : Cut Monterey Jack cheese crosswise into 1/4-inch strips.
  • Step #4 Cut each strip in half to form 2 squares.
  • Step #5 Set aside.
  • Step #6 Repeat cutting procedure with Cheddar cheese & cream cheese.
  • Step #7 : Assemble cheese slices like dominoes in two rows in a 2-quart dish, cream cheese, alternating Monterey Jack cheese, & Cheddar cheese side by side.
  • Step #8 Pour marinade over cheese.
  • Step #9 Cover and put in the fridge overnight.
  • Step #10 Drain & arrange cheese on a platter in rows.
  • Step #11 Top each row with sliced pimiento.
  • Step #12 Garnish, if desired.
  • Step #13 serve this with crackers.
  • Step #14 Yield: 25 appetizer servings.
