Marinated Flank Steak~ Low-cal (ww) Recipe

Ingredients
  • 1/4 ts Sugar
  • 1/2 ts Salt
  • 1 Clove garlic, minced
  • 1 tb Worcestershire
  • 1 Flank steak, 1 to 1 1/2lbs
  • 2 ts Soy sauce
  • 1 ts Dry mustard
  • 1/4 ts Summer savory leaves
  • 1/4 c Ea. salad oil & dry red wine

Directions
  • Step #1 FOR GARNISH--- 1 Watercress sprigs Lemon herb butter: Beat 1/3 c soft butter until fluffy; slowly beat in 1 1/2 T lemon juice until well mixd.
  • Step #2 Mix in 3 T each finely sliced parsley & watercress, 1 tsp.
  • Step #3 worcestershire sauce, 1/4 tsp.
  • Step #4 tarragon & dash white pepper.
  • Step #5 Shape into a roll or cube, wrap, & chill to mix flavors.
  • Step #6 Place steak in shallow dish.
  • Step #7 In a covered jar or mixer, worcestershire sauce, mustard, salt, sugar, soy sauce, garlic, shake together oil, wine, & savory.
  • Step #8 Pour over steak, turning to coat well.
  • Step #9 Cover & put in the fridge, 8 hrs.
  • Step #10 or more, turning once or twice.
  • Step #11 Remove steak, reserving marinade.
  • Step #12 Place on a rack in a broiling pan.
  • Step #13 Broil about 4" from heat, until well browned (about 6 mins per side for rare), brushing every once in awhile with marinade.
  • Step #14 Slice thinly, cutting diagonally.
  • Step #15 Serve topped with thin slices of lemon herb butter.
  • Step #16 Garnish with watercress.
  • Step #17 TIPS: Flank steak will be most tender if cooked only to rare or medium rare stage of doneness.
  • Step #18 Cooked more, it tends to become rather tough.
  • Step #19 You can substitute 2 T cider vinegar for 1/4 c dry red wine.
