Step #1 1/2 c picholine olives 1/2 c nicoise olives 1/2 c gaeta olives 1/2 c cracked Sicilian olives 1 bunch fresh oregano, nicoise, leaves : removed & -- sliced to : yield 5 1 head fennel : Juice of one lemon 1/4 lb parmesan cheese in a large : piece Mix picholine, gaeta & cracked Sicilian olives together in large mixing bowl.
Step #2 Toss in fresh oregano & let this stand.
Step #3 Shave fennel head on a slicer or slice as thin as possible with a kitchen knife.
Step #4 Add fennel to olives & toss with lemon juice to mix well.
Step #5 place this in large serving bowl.
Step #6 Shave parmesan over top of salad with vegetable peeler & serve.
